Hailey Bieber built a beauty empire partly on one nail idea: the glazed donut. Soft pink, glassy shine, endless screenshots. At Saint Laurent’s spring/summer 2027 show in Paris, she quietly retired that formula for the season and showed up in something darker — a deep, cool-toned brown polish so glossy that beauty editors started calling it chocolate ganache.
The look landed on 29 September 2026, against an all-black Saint Laurent wardrobe and, in the same week, a darker espresso-brown hair colour. Hair and nails finally matched. Searches followed.
Why chocolate ganache beats glazed donut this fall
Food-named manicures travel because they are easy to remember and easy to ask for at the salon. Glazed donut was spring and summer: light, sticky-sweet, camera-ready. Chocolate ganache is autumn: richer, cooler, still shiny, but with enough depth to sit next to black blazers, leather and evening denim without looking like a leftover summer holiday.
ELLE’s Kathleen Hou coined the ganache nickname after Bieber’s Saint Laurent manicure, noting that her longtime manicurist Zola Ganzorigt had not yet posted the formula. Until that drops, the visual brief is clear: deep brown, not black; cool rather than rusty; high shine rather than matte.
What the experts actually recommend
Jin Soon Choi, founder of JinSoon, told ELLE the manicure is a modern take on the classic vamp nail — a look celebrating its hundredth anniversary and one that always pairs well with colder weather. Dark nails feel chic and classic, she said; different finishes make them modern. With Bieber’s black blazer, the deep vamp shade read as intentional fall dressing. Choi’s own recommendation for a close match is JinSoon Theda, a translucent jelly brown-vamp she also used at Proenza Schouler.
Olivia Van Iderstine of Olive & June framed it as “brown nail fall,” calling the colour a crisp-weather neutral that works on every nail shape. Her practical advice: choose a deep, cool-toned brown with less red, keep application precise, and finish with a super glossy top coat so the set looks ultra shiny and polished — like a shot of espresso for your nails, timed for Rhode’s Sephora Europe moment.
Match the nails to the hair
Bieber’s manicure did not arrive alone. Colourist Matt Rez had taken her brunette several shades darker — espresso brown, her darkest in over a decade — and Fresha’s analysis with Glimpse put Google searches for “espresso hair” up roughly 400 percent year on year. When nails and hair share the same chocolate-espresso family, the whole look reads styled rather than accidental.
You do not need both to wear either. But if you are already booking a darker brunette for Diwali parties or winter coats, a matching manicure is the lowest-effort way to make the colour change look expensive.
How to get Hailey’s chocolate ganache nails
1. Pick a cool brown, not a warm chocolate.
Ask for espresso, mocha or vamp brown with minimal red or orange. Warm mahogany reads festive; cool espresso reads fashion week.
2. Keep the shape almond or softly oval.
Bieber’s set is long enough to show the colour but not so long it looks costume. If you work with your hands, a medium almond still carries the trend.
3. Build opacity in thin coats.
Sheer jelly browns like Theda look expensive when layered. Dense cream browns need a clean free edge and no flooding at the cuticle.
4. Finish with a glass-level top coat.
The ganache nickname only works if the shine is wet-looking. Matte brown is a different story (see Selena Gomez’s merlot set). For Hailey’s version, shine is non-negotiable.
5. Coordinate, don’t matchy-matchy.
Black, charcoal, cream and indigo denim all work. Avoid competing warm metallics on the same hand if you want the polish to stay the hero.
What to ask your salon for
Take a screenshot of Bieber at Saint Laurent SS27 and say: deep cool brown, glossy, almond, no glitter. If your technician offers a custom mix, Allure reported Kim Truong has mixed Chaun Legend shades Knock on Wood with a hint of Bite Me for Bieber’s chocolate browns on other outings — a useful reference for gel bars that customise.
At home, look for shades marketed as espresso, clove, hot chocolate or vamp brown. British Vogue has pointed to options in a similar lane, including OPI You Don’t Know Jacques and Manucurist Clove, for mocha-adjacent fall colour.
The takeaway
Glazed donut made Hailey Bieber the internet’s nail muse. Chocolate ganache is how she updates that power for fall 2026: same glossy discipline, darker mood, and a food nickname people will actually Google. Book the colour once. Wear it with everything black in your wardrobe.
